Dim sum dumplings with lentil and sesame sauce
Dim sum are not just dumplings. This name represents a long tradition of eating little snacks with an afternoon tea (and this tradition is preceded by a tradition of drinking afternoon without little snacks...). Stuffed buns or dumplings, delicacies cooked on steam or fried and different sweets had become so popular that restaurants started to serve them from dawn to mid-afternoon. Today you can have dim sum for sumptuous dinner as well as buy them for take-away.
There are many kinds of dim sum, also vegetable. They go really well with lentil. I recommend to prepare a sauce so that they have more flavour and they aren't dry. My newest discovery is a sauce based on tahini. It has original and rich flavour which complements the dish and feeds the senses.
Because dim sum means 'to touch a heart'.
Ingredients:
dough
180 g wheat flour
130 ml boiling water
1/2 tsp salt
1 tsp sesame oli or olive oil
filling
1 cup red lentil
1 carrot
1 onion
2 cloves garlic
1 inch piece of ginger root
1/2 tsp corriander
1/2 tsp cumin
1/2 tsp sweet pepper
1/2 tsp curry
a pinch of chilli
salt
pepper
olive oli for frying
2 tbsp grounded flax seeds (optional)
sauce
4 tsp tahini
2 tsp soy sauce
2 tsp sesame oil
2 tsp peanut butter
2 tsp rice vinegar
1 inch piece of ginger root
10 tbsp water
Place flour and salt into a bowl. Add water gradually, stiring flour with fork. Add oil and knead to a dough. Wrap in a cling film and put to the fridge for 30 minutes.
In the meantime prepare the filling. Heat oil in the saucepan, dice onion and garlic, grate ginger and put into the saucepan. Add corriander, cumin, sweet pepper, chilli and curry. Fry a few minutes and add grated carrot and lentil. Stir, add a cup of water and salt it lightly. When water boils, reduce the heat and boil until lentil is soft (add more water if needed).
Cool the filling. If it's too watery you can add 2 tbsp grounded flax seeds.
Roll out the dough into a square. Cut it into little squares (2x2 inch). Put a teaspoon of filling in the middle of each square. Fold the sides over the filling and seal the edges.
Steam dumplings about 7 minutes.
In the meantime prepare sauce by mixing all ingredients together.
Serve dumplings with sauce.
