Chickpea pancake with vegetables (gluten free)

In our private chickpea dishes canon there are a few tested positions and it doesn't change too much, just like canons do. We've been adoring chickpea curry, falafel and hummus since ages. And probably this canon wouldn't be touched but a serious competitior appeared on the horizon. It's a chickpea pancake.

Yes, yes, this inconspicuous pancake is a black horse in the race for the name of the best chickpea dish. It looks quite banal, it mostly consists of chickpea flour and water but it gives you a huge choice when it comes to vegetables to add. It doesn't require a lot of time, it intrigues with unusual flavour and it really makes you full. It's perfect for a nutritious breakfast, a snack or for dinner. In addition, it doesn't contain gluten.
So if you haven't try it yet, don't regret, just buy chickpea flour, make pancakes and taste!
